Tomato Herb Farro Salad


Farro is a type of whole grain wheat, it is sometimes called Spelt. I typically find Farro in Italian speciality markets however, if you cannot find it you can substitute with wheat berries. 
It has a lovely nutty, chewy consistency and is delicious in this salad.

You will need:


  • 1 cup dried farro
  • 3 cups water
  • 1 tsp salt
  • 1 tomato chopped
  • 1 tsp fresh chives- chopped fine
  • 1 tsp fresh basil- chopped fine
  • 1 tsp fresh parsley- chopped fine
  • 1-2 green onions- chopped fine
  • 4-5 fresh mint leaves- chopped fine
  • 1 tsp lemon zest
  • 1/2 lemon juiced
  • 2 tbsp balsamic vinegar
  • 4 tbsp olive oil
  • salt and pepper
*if you reduce the recipe in half it's perfect for 2 people or the full recipe makes some leftovers that can be taken to work the next day.



Step 1: add 1 cup dried farro to 3 cups salted water in small saucepan. Bring to a boil, then cover and reduce to low. Continue to cook for 30 minutes. Drain and let cool.


Step 2: in a medium sized bowl add farro and all ingredients. Zest lemon and juice half. Add all the chopped herbs, green onions, balsamic vinegar, olive oil salt and pepper. Mix and taste.


Step 3: can be chilled or eaten at room temperature.
