Ground Beef Kebobs with Orange Soy Glaze


These are a grilled beef and pork kebab with Asian flavours and brushed with an orange soy glaze.
If you prefer to use all beef simply replace the pork amount with beef. They are moist and full of bright flavour. The sweet orange and soy adds a nice touch to finish.

You will need:
  • 1/2 pound ground beef
  • 1/2 pound ground pork
  • 1/2 onion
  • 2 tbsp fresh cilantro
  • 1 tbsp sugar (I used coconut palm sugar)  
  • 1 inch piece of tender lemongrass stalk
  • 2 green onions
  • 2 tbsp olive oil
  • 1 tbsp grated fresh ginger (I freeze it and grate it frozen)
  • 1 tsp ground coriander
  • 1 tsp Chinese five spice powder
  • 3 tbsp soy sauce
  • 1 /2 tsp szechuan peppercorns
  • 3 cloves garlic
  • 1 tbsp sesame oil
Glaze
  • 1/4 cup soy sauce
  • 2 tbsp mirin (or you can use honey)
  • 1 clove crushed garlic
  • 1 tsp grated ginger
  • 2 tsp rice wine vinegar
  • 1/2 orange-juiced
Soak bamboo skewers in water at least 15 minutes


Step 1: put pork and beef in a bowl. Add all remaining ingredients into food processor and pulse until pureed. Add pureed mix to meat and blend.


Step 2: form into sausage shapes and form around metal or bamboo skewers. (if you don't have any skewers just grill them as sausages. Put meat in fridge for at least an hour to get flavours to infuse.


Step 3: make glaze in a small bowl or measuring cup. Crush garlic, grate ginger, squeeze orange and add soy, mirin and rice wine vinegar.


Grill meat and in the last few minutes brush with glaze



Sticky and moist. Full of flavour.
