Filet Mignon with Balsamic Herb Oil
These are quick grilled filet mignon steaks with a balsamic herb oil drizzled on top to finish. This type of steak is in the style of the Florentine steaks. Fresh cracked pepper and large chunks of your best sea salt complete the picture.
You will need:
- 2-4 filet mignon (beef tenderloin) steaks
- 1 garlic clove- crushed
- 1 tbsp fresh rosemary-chopped fine
- 2 sprigs fresh thyme
- 1 tbsp fresh parsley- chopped fine
- 1 tbsp best balsamic vinegar
- 1/2 cup best extra virgin olive oil
- fresh cracked pepper
- course sea salt (bring out your best!)
Salad
- 2 tomatoes
- 1 tsp chopped herbs
- salt
- pepper
- olive oil
- balsamic vinegar
Step 1: crush 1 clove garlic and divide evenly among steaks (both sides) and rub with a few tbsp of olive oil. Let marinate until steaks come to room temperature (at least 1 hour)
Step 2: chop fresh herbs and add to olive oil and balsamic vinegar. If you have an older balsamic vinegar use it here. (save a tsp of herbs for salad)
Step 3: make salad. Chop tomatoes, add oil, vinegar, salt and pepper and a sprinkle of the chopped herbs.
Step 4: Just before grilling sprinkle liberally with course sea salt and cracked pepper. Grill on high for a few minutes on each side.
Serve with a spoon of balsamic herb oil and a fresh tomato salad.
