Chicken Lettuce Wraps


I was in the grocery store and saw this package of romaine and iceberg lettuce and remembered eating lettuce wraps at P. F. Chang's and how delicious they were. There are so many ways to make these and this my version.

You will need:

  • 1 pound of ground chicken or chopped chicken if you prefer (approx 3 chicken breasts)
  • 2 tbsp dry mushrooms- soaked and then chopped
  • 1/2 onion- chopped fine
  • 2 tbsp grated ginger
  • 2 cloves garlic - chopped fine
  • 2 spring onions/scallions- chopped fine
  • 1 small bok choy- chopped
  • 1 stalk celery - chopped
  • 1/2 apple - chopped or 1/2 cup chopped water chestnuts (for some crunch)
  • 3 tbsp soy sauce
  • 1 tbsp rice wine vinegar
  • 2 tbsp oyster sauce
  • olive oil or coconut oil for frying chicken
  • lettuce to use as wrappers or boats
  • fresh cilantro to top
Sauce
  • 1/4 cup soy sauce
  • 1 tbsp sugar
  • 1 tbsp rice wine vinegar
  • 1 clove garlic -crushed
  • 1 tbsp ginger- grated
  • 1 tsp lemon juice
  • 1 tsp sesame oil


Step 1: Gather your ingredients and chop or grate onions, ginger, garlic, celery, bok choy apple and cilantro. You want everything ready before starting to cook. You want to add some crunch by adding the apple or some water chestnuts and celery. You can use all of them if you like.


 Step 2: Soak a few tbsp of dry mushrooms in hot water for 5 minutes. Remove from liquid and chop. Reserve liquid and use when cooking chicken.

Step 3: prepare your sauce in a small jar with a lid. Add all ingredients and shake to incorporate. Set aside.


Step 4: in a saute pan add some olive or coconut oil and fry the onions until starting to brown approx 6 minutes on medium heat. Add your ground or chopped chicken. 


Step 5: add garlic and ginger and continue to cook until water evaporates and the meat starts to brown.


Step 6: add your apples, bok choy, celery, water chestnuts, soy sauce and rice vinegar. Fry on high for a few minutes. You want the apples, celery and water chestnuts to maintain some of their crunch.


I just put the pan on the table and the lettuce and let everyone build their own. Pile on the chicken and top with some sauce and crunch and enjoy!
