Beef Rouladen Dinner

This is perfect for a Sunday Dinner. Invite your favorite Oma over!
What you need:
Rouladen
- sirloin tip roast or top round roast (partially frozen before slicing)
- mustard
- salt and pepper
- slices of pickles
- slices of carrots
- slices of green onion
- slices of celery
- 1 white onion chopped
- 4 cloves of garlic chopped fine
- 1/2 cup white wine
- beef broth
- 1 tsp corn starch
- Worcestershire sauce
Horseradish Mashed Potatoes
- russet/baking potatoes
- prepared horseradish ( grated fresh if you have it!)
- milk
- butter
- salt and pepper
Carrots
- slices of carrots
- maple syrup
- butter/olive oil
- salt and pepper
Zucchini
- Sliced zucchini
- olive oil
- salt and pepper
Step 1: Choose your meat. Most people use top round pounded flat for rouladen. I prefer Sirloin. Top round makes a nice round piece of meat but, in all honesty I have never cooked eye of round where it ever tasted better than a piece of leather. I don't know why people eat it. It is tough no matter how long or short you cook it. It has no fat and it always tastes dry and tough to me. I use the Sirloin because it is tender and flavourful. It isn't perfectly round but I will still always choose this over eye of round any day! You pick what you like. I went to my favourite market and asked them to cut a roast in half for me.
Step 2: partially freeze your meat, slice thin with sharp knife.
Step 3: between plastic wrap pound the slices thin
Step 4: slice vegetables in similar sizes
Step 5: brush the slices with mustard, salt and pepper. Top with a few slices of pickle, carrots and onions.
Step 6: roll up and fasten with toothpicks or kitchen twine.
Step 7: fry in olive oil until browned. Do not crowd the pan.
Step 8: once browned remove to a plate.
Step 9: in same pan fry onions with additional oil if necessary. Scrape up all the browned bits on the bottom of the pan. Add garlic and cook for a minute.
Step 10: add white wine and scrape up any bits still stuck to the pan. Add broth.
Step 11: return meat back to pan. Bake in oven 325 degrees F for 30 minutes covered, then up to 1 hour uncovered. Turn occasionally. Remove from oven and take out meat (remove toothpicks) and put on a plate .
Step 12: make mashed potatoes. Boil peeled potatoes. Drain and return to pot. Add milk, butter, horseradish, salt and pepper and mash.
Step 13: in a fry pan with olive oil and butter fry sticks of carrots, once they soften add maple syrup and salt and pepper.
Step 14: in a small fry pan add zucchini and olive oil, salt and pepper.
Step 15: Finally, prepare gravy . Add corn starch to a small amount of water in a cup and mix. Add slurry to beef drippings and mix until comes to a boil add salt and pepper. A few splashes of Worcestershire and strain.
