Prociutto and Green Grape Pizza
It's Friday and that means Pizza Night! This is a weird but good one!
I also find adding a spinach salad right on top makes it a great meal.
You will need:
Dough
- 1 1/2 tsp regular yeast
- 1 1/2 cups warm water
- 1 tbsp honey
- 3 cups all purpose flour
- 1 cup whole wheat flour
- 1 tsp salt
Topping
- green grapes cut in half
- slices of prosciutto
- goat cheese
- caramelized onions (fry slices of onions in olive oil and salt for approx 20 min on low)
- crushed garlic
- drizzle balsamic vinegar (this is the time for good aged balsamic or balsamic glaze)
- fontina and mozzarella grated
- olive oil
Place a pizza stone on the mid-lower portion of your oven. Heat oven to 475 degrees F for at least 1 hour to get stone good and hot.
*Pizza stones cost literally $10 in most grocery stores and I just leave mine in the oven all the time.
Step 1: place warm water, yeast and honey in a bowl, wait 10 minutes until foamy
Step 2: add flour and salt and mix until you need to continue on the counter. Knead dough until all the flour has been absorbed and you have a smooth dough. Place dough into a large bowl coating the ball in olive oil before covering with plastic wrap.
Step 3: leave on counter to rise 3hours minimum or leave in fridge 24 hours to make the best crust.
Step 4: divide dough into 2 pies. Roll out onto a piece of parchment paper with some flour.
Step 5: add your toppings- I do not use sauce here (you could) I just brush with olive oil and some crushed garlic
Step 6: bake at 475 degrees F for approx 10 minutes, watch it so it gets a nice browned crust and bottom but don't burn the top. I bake it directly on the parchment paper on the pizza stone
Step 7: drizzle with some good balsamic vinegar and serve. I usually wait at least 5 minutes before cutting.
If you want to make a spinach salad and top it directly on the pizza it makes a complete meal!
