Garlic Scape Spread/Pesto


Garlic Scapes are the flower of the garlic plant and are only available for a few weeks at the beginning of the season. If you happen to see them in your market pick up a bunch. They have a nice mild garlic flavour and make a nice thick pesto which can be used with pasta or I like to mix in burgers or ground turkey or just spread on toasted bread. It adds great moisture as well as flavour to meat and if you top with more shredded Parmesan it's awesome on crostini. It also freezes perfectly.

You will need:
  • a bunch of scapes (mine had 10 in the bunch)
  • 1/4 cup pine nuts 
  • 1/4 cup grated Parmesan cheese
  • 1/4 -1/2 cup olive oil
  • salt. pepper
  • optional 1 clove garlic crushed




Step 1: wash and cut off any ends


Step 2: blend in food processor until finely ground. Add additional oil if you prefer it thinner. I add a clove of garlic to make it stronger in garlic flavour but, if you prefer it mild leave the extra clove out. 


Taste it and add more salt and pepper if necessary


I added about 3 tbsp to my half pound of ground turkey and grilled. I also love it on toasted french bread with a drizzle of great olive oil.
