Chicken on a Bun
The easy COB! Chicken on a bun. You can make it so many ways and it's always a hit. You can make them small and serve them on slider buns or dinner rolls or make them larger for a full sandwich. It's always easy because it can be done on the grill or in a pan on the stove or even on an indoor grilling machine. These are made two ways. I have made Hot Blue Cheese Sliders and a Sweet Chicken with Hot and Sweet Pepper Sauce.
You will need:
Blue Cheese Sliders
- 2 chicken breasts- sliced and pounded thin
- 1-2 tsp barbecue seasoning spices
- 1 tsp dried oregano
- 1 clove garlic crushed
- 2 tbsp olive oil
- 1/4 cup hot sauce
- 1 tbsp cider vinegar
- 1 tbsp butter
- blue cheese crumbles
- slider buns or dinner rolls
Chicken with Hot and Sweet Pepper Sauce
- 2 chicken breasts
- Balsamic vinegar
- salt/pepper
- honey
- Hot and Sweet Pepper Sauce (a previous post- see link)
Step 1: slice the chicken breast into smaller pieces and pound thin for sliders, leave large for regular sized.
Step 2: I sprinkle with a good quality seasoning mix- try to get one with no artificial ingredients just spices. Add crushed or granulated garlic and dried oregano. I also coat in olive oil so they do not stick to the grill. let come to room temperature before grilling.
Step 3: add butter to a bowl and melt for 20 seconds to melt. Add hot sauce and cider vinegar. Set aside. Crumble blue cheese. Set aside.
Step 4: grill chicken on medium high until cooked. Add sauce and cheese and serve on little buns.
OR
Step 1: slice chicken in small pieces for sliders or larger for regular size. Brush with aged balsamic vinegar, salt and pepper. Grill until cooked and pour a bit of honey on each piece of chicken. Top with Hot and Sweet Pepper sauce or add a bit of crumbled feta to this sauce and serve.
