Jicama Slaw with Avocado Dressing
Jicama (pronounced hee-ka-ma or like Jose) makes a great slaw. This can be served as salad or topped on your favourite burger or sandwich. It's crunchy and sweet and I like the creamy avocado in the dressing.
You will need:
- 1 small Jicama
- 1 carrot- grated
- 2-3 small red peppers
- 2 small English cucumbers
- 1/2 avocado
- 1-2 tbsp olive oil
- 1 tbsp white wine vinegar
- 1/2 lime juiced
- 1 tsp sugar or honey
- 1 tsp mayonnaise
- 1 tbsp chopped cilantro
- salt and pepper
Step 1: peel and slice jicama in half. Half will be grated and the other half will be sliced to add different textures to the slaw.
Step 2: grate the carrot. Grate one cucumber and slice the other. Grate the pepper and slice the second with a knife.
Step 3: chop the cilantro .
Step 4: in a bowl mash 1/2 the avocado into a paste, add vinegar, olive oil, lime juice, sugar and 1-2 tsp mayonnaise (not much just a touch to make it creamy) Toss into slaw. Taste and add salt and pepper.
Serve with some additional slices of avocado and a drizzle of olive oil.
