Healthy Zucchini Fries


I had a couple of nice, fresh zucchini in my fridge and decided to make some baked fries. They turned out fantastic. A few seasonings, some breadcrumbs and some fantastic olive oil and you have a great vegetable fry that is still crunchy but, full of great flavour. 


You will need:
  • 1-2 small zucchini - sliced into wedges
  • 1 egg (you may need a second one)
  • 1/2 tsp granulated garlic
  • 1 clove garlic - crushed
  • 1/2 cup breadcrumbs
  • 1/4 cup freshly grated Parmesan cheese
  • 1 tsp Tuscan or Italian seasoning spice
  • 1/2 tsp granulated garlic
  • 3-4 tbsp olive oil - I used Domenica Fiore Reserva
  • salt/pepper
  • optional add a bit of crushed chili flakes 

Step 1: wash and slice each zucchini into 3 pieces. Cut each piece into quarters, then cut each quarter into half. You will get 8 pieces from each section.


Step 2: in a small bowl whisk egg with fresh and dry garlic. Mix and set aside

Step 3: in another small bowl add breadcrumbs, Parmesan cheese, Tuscan or Italian seasoning and granulated garlic. Mix and set aside.


Step 4: add zucchini wedges to the egg and then into the breadcrumb mix. Place on a parchment lined baking sheet. Try to not add  additional breadcrumbs on the pan because it will burn in the oven. 

Heat oven to 400 degrees F.

Step 5: at the last second before putting the fries in the oven drizzle with good quality olive oil. I have used Domenica Fiore Reserva.


bake at 400 degrees F - bake for 5 minutes, then flip and add a bit more oil if any look dry. Bake 5 -10 more minutes checking every few minutes to avoid burning. Mine took 13 minutes.


Season with salt, pepper and a bit of crushed chili flakes if you like them a bit spicy and eat immediately!
