If you love a nice crunchy roast potato you need to try using coconut oil next time.
- a few potatoes
- a sweet potato
- 2-3 tbsp coconut oil
- a sprinkle of Italian seasoning
- salt and pepper
Step 1: with your hands take a few tbsp of coconut oil and toss the potatoes. The coconut oil is solid but, the warmth of your hands will melt it and turn it into a liquid.
Step 2: sprinkle Italian seasonings, salt and pepper. Roast at 375 degrees F until crispy and crunchy. I like to cook for approx 15 minutes and then flip the wedges and continue cooking until they are as crispy as you like.
Sprinkle more salt and pepper and serve with your favourite meal.
