Coconut Pancakes with Lime Syrup

Saturday morning pancakes! These are made with coconut and served with a lime syrup and some fresh papaya which always tastes great with lime on it.

You will need:

  • 1 cup flour
  • 1 tsp baking powder
  • 1/4 shredded coconut
  • 1 cup coconut almond milk
  • 1 egg
  • 2 tbsp honey
  • optional add 1/2 tsp coconut extract - this really bumps up the coconut flavour!
  • 1/3 cup sugar
  • 1/3 cup lime juice -approx 1 1/2 - 2 limes
  • 1 tbsp lime zest

  • sliced papaya

Step 1: add all dry ingredients to a bowl. then add wet and mix with a whisk until smooth.

Step 2: in a small pan add ingredients for syrup and stir until dissolved in warm liquid. Takes like a minute or two. Set syrup aside.

Step 3: In a large non-stick pan add olive oil or butter or even coconut oil. When hot enough add spoons of batter and cook on one side until bubbles form. Flip and cook until nicely browned.

Serve with slices of papaya and your lime syrup...make more.
