Guacamole


You can make it chunky, you can make it smooth. 
Guacamole is a delicious dip for tortilla chips or a topping for fish or chicken. 
Don't buy it when it is so easy to make it yourself.

You will need:
  • 2 ripe avocados
  • 1-2 tbsp onion - chopped fine
  • 1 garlic crushed
  • 1 tbsp jalapeno - chopped fine
  • salt
  • pepper
  • 2 tbsp olive oil
  • 1/2-1 lime juiced
  • 1 tbsp cilantro- chopped fine

Step 1: start with buttery smooth, ripe avocados. Use a knife to cut around the pit and twist open. Remove pit.


Step 2: carefully slice avocado in half. Make slices with a dull knife, (don't cut your hand!) holding the avocado in the palm of your hand. I go in one direction and then the other. Scoop out flesh with a spoon into a small bowl.


Step 3: with a fork mash the avocado until it is as chunky or smooth at you like.


Step 4: add fresh squeezed lime and mix well.


Step 5: chop onion, jalapeno and cilantro finely. Add crushed garlic salt and pepper.


Step 6: Mix in cilantro, onion, garlic, olive oil, salt and pepper. Taste and if necessary add more salt, pepper or lime.I use lots of lime in my guacamole.



Drizzle a bit of olive oil on top serve with chips.
