Quick Phyllo Turnovers -Chocolate Banana & Strawberry

These are some easy ideas you can make and have ready in your freezer. I take store bought Phyllo dough and add fillings like chocolate and some banana slices or cream cheese and jam and create little turnovers.
I freeze them in Ziploc bags and take them out when I want a quick dessert. They are sweet and flaky and they taste amazing just hot out of the oven!

You will need:

  • 6 sheets of thawed Phyllo dough for each type of turnover
  • some melted butter (approx 4 tbsp for each type of turnover)
  • chocolate squares or chips
  • slices of ripe banana
  • 4 oz of cream cheese (room temperature)
  • 2 tbsp sugar
  • pinch of cinnamon
  • your favourite jam
  • 1 tsp lemon zest
  • more melted butter
Heat oven to 350 degrees F

Step 1: make your cream cheese filling. Take a small tub of cream cheese and just cut in half with a knife. Mix in a bowl until smooth. Add some sugar and a bit of cinnamon. Add some lemon zest and a spoon or two of jam. Mix until mixture is smooth and pink! I used some jam I made last summer but, store bought works perfectly fine.

Step 2: the phyllo can thaw in the fridge or on the counter. Once thawed carefully remove from plastic and remove 6 sheets to work with at a time (so it doesn't dry out) Roll up the rest. I refreeze the remainder phyllo.

Step 3: I just eyeball it and slice 3 equal slices lengthwise, then stack. I get a brush and some melted butter ready (I melt 2 tbsp of butter in the microwave for about 20-25 seconds) 6 sheets will make 9 turnovers. Melt more butter as needed.

Step 4: Take one sheet and carefully brush on some butter, then sprinkle with a bit of sugar. Place another sheet on top and brush with butter. I used coconut palm sugar but you can use any kind or none at all.

Step 4: place a tsp of cream cheese mix then some jam on top (don't over fill) Fold the buttered turnover like folding a flag. Brush top with more butter and sprinkle with sugar.

If you are making the Chocolate Banana version, just add a square of your favourite chocolate along with 3 slices of fresh banana and butter and wrap your phyllo turnovers the same way.

Place turnovers on a parchment paper lined baking tray. Brush all turnovers with butter and a sprinkle of sugar. Bake on 350 for 15 minutes or until golden. Serve with a drizzle of chocolate or powdered sugar. Serve warm. They go great with some whipped cream or ice cream too!
