Sweet and Spicy Ribs


These are sticky and spicy and sweet. They are cooked in the oven, then cooled and grilled with sauce. You can make them up to grilling them the day before serving them if you want. 

You will need:


  • 2 racks of baby back ribs
  • 1 tsp granulated garlic
  • 1 tsp smoked sweet paprika
  • 1 tsp granulated onion
  • 1/4 cup brown or coconut palm sugar
  • 1 tsp salt (I used smoked salt)
  • 1/2 tsp black pepper
  • 1 tsp ground cumin
  • 1/2 tsp curry spice mix
  • 1/2 tsp cayenne powder or crushed red pepper flakes in a spice mill
  • 1 tsp dried oregano
Sauce
  • 1/4 your favourite barbecue sauce
  • 2 tbsp honey
  • 1 tbsp hot pepper jelly
  • 2 tbsp orange juice

Step 1: wash and dry the ribs to remove any bits of bone or residue that may be on them. Remove the skin on the back of the ribs. I normally take a knife to start it and then remove by pulling it off. If you are having a hard time getting a grip use a piece of paper towel to hold it.

Step 2: mix all the dry ingredients together to form the rub.


Step 3: spread the dry rub evenly on both sides of all ribs.


Step 4: I cut the ribs in  half and wrapped them in parchment paper and foil. I use the parchment because I don't like my food to touch the foil directly.



Step 5: bake at 350 degrees F for 1 hour wrapped up. I then open up the foil and continue to cook them for 1/2 -1 hour until they start to brown. Remove from foil and let cool before grilling or cover and leave in fridge until ready to grill.



Step 6: in a small bowl prepare sauce for basting. I make just enough sauce for this recipe.


Step 7: grill on low heat basting with sauce until sticky and browned.
