Amaretto Berries and Chantilly Cream


This is one of the first fancy booze desserts I learned to make. My sister in law Alex taught me this one many years ago and she always made this with strawberries but, it works well with all berries in my opinion. Just a few ingredients and a few minutes and you have something delicious to end a meal.

You will need:
  • 2 cups berries - you can use sliced strawberries, blueberries, raspberries, blackberries or all of them!
  • 1-2 tbsp vanilla sugar (or plain sugar)
  • 1/4 cup Amaretto Di Saronno -almond liqueur
  • 1 cup whipping cream
  • 1-2 tbsp vanilla sugar (or plain sugar)
  • 1 tbsp Amaretto Di Saronno
  • 1 square of chocolate to grate on top

Step 1: wash and drain your fruit. I like to use organic berries if you can get them because these fruits typically have pesticides used on them. In a bowl add your fruit and a bit of sugar. I use my own homemade vanilla sugar (which is just sugar with vanilla beans in it) Add Amaretto and mix. Let sit in fridge to macerate for at least 1 hour.


Step 2: in another bowl add whipping cream, sugar and a bit more Amaretto. Whip with a hand mixer or with a whisk by hand until you have soft peaks. Set aside until fruit has macerated.


Serve in a pretty bowl with cream on top


you can also grate some chocolate on top for a nice added finish or crumble some store bought meringues. Simple yet glamorous!
