Celery and Cucumber Salad
This is an easy salad to make because you use the food processor to slice the cucumbers, celery and green onions quickly then mix the dressing in small jar and you are pretty much done.
You will need:
- 6-8 stalks of celery
- 1 small cucumber or half an English/hothouse cucumber (honestly, does anyone ever eat those old fashioned waxy ones with all the seeds anymore?)
- 1 tbsp fresh parsley- chopped
- 1 tbsp fresh cilantro/coriander -chopped
- 1 spring onion sliced thin/you can also add to food processor
- 1/4 cup olive oil
- 3 tbsp sherry vinegar
- 1 tbsp honey
- squeeze of lemon or lime
- salt/pepper to taste
Step 1: I always buy these packages with 2 celery hearts so I try to use them in salads from time to time so they don't go to waste just waiting for a soup. I remove any tough outer stalks and the green leaves but I use the tender yellow leaves. You can easily use the slicing attachment on the food processor and quickly chop a bunch in a few seconds. Slice a cucumber in half and also run through machine.
Step 2: place your sliced vegetables along with your spring onions, parsley and cilantro in a large bowl.
Step 3: in a small jar mix your olive oil, sherry vinegar, honey,lemon or lime juice, salt and pepper.
Toss and taste for seasoning. If you need more salt and pepper adjust.
