Sundried Tomato Millet Pilaf


Have you ever tried millet? have you even heard of millet? Millet is a seed but, it is sometimes referred to as a grain. I always think of millet as bird seed. Millet is a gluten free seed, it digests easily and there are lots of vitamins and minerals packed in those little seeds. It is a nice change from a rice or couscous.

You will need:

  • 1 cup millet
  • 2 1/2 cups water
  • 2 tbsp olive oil
  • 1/2 onion diced fine
  • 1 clove garlic diced fine
  • 1 tbsp parsley
  • 3 sundried tomatoes(packed in oil)
  • salt and pepper
dressing
  • 2 green onions diced fine
  • 1 tbsp parsley chopped fine
  • 2 sun dried tomatoes- chopped fine
  • 1 tbsp sherry vinegar
  • 2-3 tbsp olive oil
  • salt/pepper
*optional top with some toasted pine nuts!


Step 1: in a food processor add 1/2 onion, 1 garlic, 3 sun dried tomatoes, parsley, salt and pepper.


Step 2; in a medium saucepan add olive oil and onion, garlic, parsley mixture. Saute few minutes. Add millet and cook 3-5 minutes more.


Step 3: add water and let come to a boil, then cook on medium heat for 20 minutes covered and 10 minutes uncovered until water is absorbed and seeds are cooked.


Step 4: put millet in a bowl while you prepare final toppings and dressing. Mix and serve warm like a rice pilaf. You can add a piece of chicken or fish to make this a dinner or eat as is for a nice light lunch.
