Celeriac Simply
If you have never tried celeriac or celery root this is a great introduction. It is a wonderful vegetable that can be pureed like mashed potatoes or made into a creamy soup. It has a nice celery flavour that I especially like simply sauteed in olive oil , salt, pepper and ground celery. Try it next time you consider serving potatoes.
You will need:
- 1 celery root -peeled and cubed
- 3-4 tbsp olive oil
- salt/pepper to taste
- 1 tsp ground celery seed
Step 1: with a sharp knife slice off the tough, dirty exterior of the celery root. You may need to wash it once it is peeled.
Step 2: slice the celery root and then cut into cubes or fries if you prefer.
Step 3: saute the celery root in the olive oil and spices for 20-30 minutes on medium to medium-low heat to slowly caramelize and brown the celery root. I use just enough oil to coat the vegetable. I start the saute on a higher heat to get a good sizzle and then reduce the heat to maintain a consistent heat to fry the celery until it is crispy. Serve like home fries.
