Meyer Lemon Yogurt Dressing

This is a creamy type of salad dressing that is made with zero fat yogurt. The Meyer lemon gives it an  almost orange flavour that is really nice and the honey gives the dressing good balance. I used it on both a green salad and as a coleslaw dressing and it was great.

You can make great dressings at home in just a few minutes and you know exactly what is in them.

Next time you see a Meyer lemon in the store try it - it is a cross between a Mandarin orange and a lemon.

You will need:

  • 2 tbsp zero fat plain yogurt (I used heaping tbsps)
  • 1 tsp Dijon mustard
  • 1/2 Meyer lemon zested fine
  • 1/2 Meyer lemon juiced
  • 1 tbsp fresh chives- chopped fine
  • 1-2 tbsp good quality olive oil
  • 1 tbsp honey.

In a small bowl add yogurt, mustard, zest from half a Meyer lemon, juice from the lemon, chopped chives, olive oil and honey. Whisk and use or store in a small air tight container.

Can be stored in the fridge for a few days.

It was great on a salad of mixed greens with some seeds sprinkled over top and

also on some finely chopped cabbage or cabbage and a small carrot in a food processor. It makes a great coleslaw dressing.
